Coincidently, this book was a gift on the first day of my newest commitment to healthier eating. How many times have we looked at greens in the grocery store and had no clue how to prepare them? This author provides beautiful photographs, interesting histories of the greens as well as nutrient values. Not only that, she has included simple recipes that include easy to gather ingredients. The recipes include some meat and poultry, but not as the primary focus of the dish. I just finished reading this book and am headed to the store to purchase some greens I've never tried. This book has inspired me to try at least 3 new choices per week for a healthier and flavorful eating lifestyle.Informative, great recipes, great buy. Purchased an additional copy for a gift.
